HEALTHY BLUEBERRY PANCAKES


Craving some pancakes? I got you with this healthy recipe! What kind of pancakes are your favorite?
These ones are gluten-free, refined sugar free, dairy free and low carb!

I have to say pancakes are not the best sweet I make..because I am not use to cook them, a need more practice! These ones turned out pretty good so I am sharing the recipe with you! And you should try them as well because they’re a very nutritious way to have your breakfast!

DIABETIC DIET TIP

These healthy blueberry pancakes are low carb and have omega-3 healthy fats and fiber! Each of these pancakes have great macronutrients. You can always reduce the tablespoons of coconut sugar or use stevia instead if you want less sugar content.

Each healthy blueberry pancakes has:

6.5gr of protein · 9gr of carbs · 2gr of fiber · 8.5gr of sugar · 5.8gr of fats

Remember to always start eating when your sugar levels are stable around 80-120mg/dL and that balance is key!

Blueberry Pancakes

INGREDIENTS

  • 1/2 cup or 45gr of almond flour

  • 1 tablespoon of flaxseed meal

  • 3 tablespoons of coconut sugar

  • 1 teaspoon of baking powder

  • 1 organic egg

  • 4 organic egg-whites

  • 1/4 teaspoon of pink Himalayan salt

  • 1/2 cup of fresh blueberries

  • yacon syrup as a topping 


STEPS

  1. Blend everything together in a food processor or with a hand mixer.

  2. Heat a lightly oiled pan over medium high heat. Pour the batter onto the pan, using approximately 1/4 cup for each pancake.

  3. Brown on both sides and serve hot with desired topping. I used walnuts, blueberries and yacon syrup!

* Makes about 6 pancakes.

🇪🇸 Spanish:

Seguro que os gustan los creps/pancakes! Esta receta saludable es para unos deliciosos creps de arándanos bajos en carbohidratos! Son fáciles y rápidos de hacer. No llevan gluten, ni lácteos ni azúcares refinados!

INGREDIENTES

  • 1/2 taza o 45gr de harina de almendra

  • 1 cucharada de semillas de lino trituradas

  • 3 cucharadas de azúcar de coco

  • 1 cucharadita de levadura en polvo

  • 1 huevo ecológico

  • 4 claras de huevos ecológicos

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1/2 taza de arándanos

  • sirope de yacón como topping 

PASOS

  1. Batir los huevos y claras y mezclar todo junto.

  2. Calentar una sartén a medio fuego. Añadir 1/4 taza de la mezcla y añadir 3-4 arándanos para cada crep.

  3. Cocinar de los dos lados y servir calientes con el topping deseado. Yo he usado nueces, arándanos y sirope de yacón.

* Salen unos 6 crepes.
