PROTEIN FLOURLESS CHOCOLATE COOKIES

Today I’m sharing this easy and healthy recipe for yummy flourless chocolate cookies!

These healthy flourless cookies are made with our flour and have a high protein content! Not only that but they’re also made without oil or butter and they turned out pretty good!!

DIABETIC DIET TIP

These healthy cookies are an experiment. I didn’t use any flour or any butter/oil. I wanted them to be grain and nut free and have less fat content than my usual healthy cookie recipes and also to have high in protein. And I got it pretty close! You can also substitute the coconut sugar with any sweetener of choice, but remember that volume matters so if you use just stevia it will be less quantity that you add to the batter and I’m not sure how it will turn…

The macros per cookie are the following:

11.5gr protein · 15.3gr carbs · 3gr fiber · 11gr sugar · 4.6gr fats

So as you can see, using few quantity of sugar and no flour, it still has carbs and sugar content (mostly from the chocolate chips and coconut sugar).

You don’t achieve a significant reduced carb or sugar content but you have less fat content so I still think is better for diabetics to eat a higher fat content cookie in terms of blood glucose levels! So be always sure to check your blood glucose levels and be stable around 80-110gr/dL when eating this yummy cookies!

Anyway, variation and balance is key and is always good to have different options depending on the macros you need :)

INGREDIENTS

  • 1/3 cup or 50gr coconut sugar

  • 2 scoops or 60gr of chocolate protein powder

  • 1/2 cup or 40gr unsweetened cacao powder

  • 1/4 teaspoon pink Himalayan salt

  • 1 large egg

  • 1 large egg white

  • 1 teaspoon vanilla extract

  • 1/3 cup or 50gr dark chocolate chunks or chips


STEPS

  1. Preheat oven to 350F/175C. Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the powdered coconut sugar, cacao powder, protein powder and salt.

  3. In another bowl, whisk the egg and egg white, add the vanilla extract and mix with the dry ingredients from the previous step. The consistency will be very sticky.

  4. Fold in the chocolate chips.

  5. Scoop the batter onto the prepared baking sheet. Makes about 6 big cookies. Leave enough space between each cookie as they will spread a bit.

  6. Bake for 12-14 minutes, until the tops are glossy.

  7. Let the cookies cool completely on a rack.


* Store in an air tight container at room temperature for a couple of days or in the fridge.

Hoy os comparto esta receta de galletas proteicas de chocolate sin harinas! No llevan ningún tipo de harina, ni siquiera de almendra o coco. He querido experimentar que tal quedaban y la verdad que muy bien! Lo único que a los pocos días se endurecen demasiado, así que si las hacéis, comerlas el mismo día o al día siguiente :)

INGREDIENTES

  • 1/3 taza o 50gr azúcar de coco

  • 2 scoops o 60gr de proteína en polvo de chocolate

  • 1/2 taza o 40gr de cacao puro en polvo

  • 1/4 cucharadita sal rosa del Himalaya

  • 1 huevo grande ecológico

  • 1 clara de huevo grande ecológico

  • 1 cucharadita extracto de vainilla

  • 1/3 taza o 50gr de chips o trozos de chocolate negro


PASOS

  1. Precalentar horno a 175C. Colocar paper de horno en una bandeja.

  2. En un bol, mezclar los ingredientes secos. Reservar.

  3. Batir huevos con vainilla y añadir a la mezcla anterior.

  4. Añadir las pepitas de chocolate y mezclar bien todo.

  5. Con una cuchara verter en la bandeja unas 6 redondas, hacerlo con una cuchara ya que la masa será muy pegajosa, dejar espacio entre cada una de las galletas ya que se van a expander un poco.

  6. Hornear unos 12-14 minutos.

  7. Dejar enfriarlas por completo en una rejilla y a disfrutarlas!!

* Conservar en un recipiente hermético a temperatura ambiente durante un par de días o en la nevera.
