CHOCOLATE COVERED PEANUTS

The easiest snack there is! Choose any nut and mix with dark chocolate… done! Today is the national Chocolate Covered Day so I thought to cover some peanuts with dark chocolate but one by one was going to take too much time, like with these chocolate covered cashews.

So instead I just mixed peanuts with dark chocolate, let it cool and broke into clusters.

DIABETIC DIET TIP

These is indeed an easy and very diabetic friendly snack. There’s barely sugar content here since there is only two ingredients: peanuts and dark chocolate!

Remember that healthy fats are your friend when trying to lower your glucose levels :)

So this healthy snack can be eaten any time of the day, you can add some variations adding other ingredients to make it more tasteful as well.

INGREDIENTS

  • 100gr of dark chocolate (I used 85%)

  • 50gr peanuts (you can use also salted but if so, do not add more salt)

  • Pinch os pink Himalayan salt (omit if using salted peanuts)

  • Optional: if you want it more sweet, add 1-2 tablespoons of coconut sugar.


STEPS

  1. Melt the dark chocolate and mix with the peanuts until they’re fully covered in chocolate.

  2. Spread the mix over a tray with parchment paper and let it cool in the fridge.

  3. Once firm, break into clusters and enjoy!


* Store in an air tight container at room temperature or fridge.

🇪🇸 Spanish:

Snack fácil y rápido con tan solo 2 ingredientes!!! Podéis usar cualquier tipo de fruto seco, yo he elegido cacahuetes esta vez, pero también tenéis la versión de anacardos cubiertos de chocolate AQUÍ.

INGREDIENTES

  • 100gr de chocolate negro (yo he usado 85%)

  • 50gr de cacahuetes

  • Pizca de sal rosa del Himalaya (no añadir sal si los cacahuetes ya son salados)

  • Opcional: si queréis añadir un poco más de dulzor, añadir 1-2 cucharadas de azúcar de coco.


PASOS

  1. Derretir el chocolate negro y mezclar con los cacahuetes hasta que queden cubiertos de chocolate.

  2. Verter la mezcla sobre una bandeja con papel de horno y dejar enfriar en la nevera.

  3. Una vez enfriado y duro, romper en trozos y listo!

* Conservar en un recipiente hermético a temperatura ambiente o nevera.
