BANANA OATMEAL PANCAKES

Happy Monday!

I usually don’t post during the weekends, since beside my principal work, I also prepare the recipes for the week! But I thought pancakes are usually made in the weekend rather than in between.. what do you actually have for breakfast? Do you prefer a sweet or savory breakfast??

I love love love pancakes, and this recipe has turned out great in terms of consistency and flavor! These healthy pancakes are gluten free, refined sugar free and dairy free!!

DIABETIC DIET TIP

These healthy banana oatmeal pancakes have high carb content. You can always reduce the amount of sugar if you do not add any sugar or sweetener, like I detail in the recipe below.

Remember to always start eating when your sugar levels are stable around 80-120mg/dL and that balance is key!

INGREDIENTS

  • 3 whole eggs

  • 1 banana

  • 100gr oats

  • 300ml milk of choice (I used oat milk)

  • 1 teaspoon of baking soda

  • 1 teaspoon of vanilla extract

  •  Optional: 1-2 tablespoons of yacon syrup (if you want them more sweet)

  • Toppings: banana, blueberries, syrup, chocolate chips,…


STEPS

  1. Mix all the ingredients in a hand mixer or blender except the toppings.

  2. Medium heat and oil spray a small pan.

  3. Add a portion of the batter onto the pan and cook.

  4. Repeat until you use all the batter, I made 6 pancakes.

    * Store in the fridge, if you don’t eat them all first!!

🇪🇸 Spanish:

Ya tenemos otra receta de pancakes! Esta vez son altos en carbohidratos ya que están hechos con avena y plátano, así que si preferís una opción low carb clicar en esta receta de Pancakes de arándanos bajos en carbohidratos.

INGREDIENTES

  • 3 huevos enteros

  • 1 banana

  • 100gr de copos de avena

  • 300ml de leche de avena o la que prefiráis

  • 1 cucharadita de bicarbonato sódico

  • 1 cucharadita de extracto de vainilla

  •  Opcional: 1-2 cucharadas de sirope de yacón (si los queréis más dulces)

  • Toppings: banana, arándanos y sirope


PASOS

  1. Batir todos los ingredientes menos los toppings con una batidora de mano.

  2. Calentar una sartén de unos 15cm de diámetro y aplicar aceite en espray.

  3. Verter un poco de la mezcla y dejar que se cocine el crepe.

  4. Repetir hasta que se acabe la mezcla, a mi me han salido 6 crepes/pancakes.

* Conservar en nevera (si os sobran, que lo dudo…!)
