GREEN TEA MATCHA CHEESECAKE BROWNIES

I wanted to make a combination of cheesecake with brownie, so instead of doing the classic cheesecake I decided to go with a green tea Matcha Cheesecake and also, in the shape of little loaves instead of a big cake, aren’t they cute?

The size of mini loaves are great because is just the perfect amount you need to satisfy your sweet tooth!

These healthy brownies are gluten free, refined sugar free and dairy free! They are so delicious and they’re not as difficult as may seem to bake them!

DIABETIC DIET TIP

These healthy cheesecake-brownies are a great option as a healthy dessert or snack! The Brownie part is actually like these Brownie recipe that I have made before, low carb! And the cheesecake filling is also low carb since it’s just cream cheese, cream, egg, stevia and green tea Matcha powder.

So this recipe is low carb overall and will not spike your sugar levels as long as they’re stable around 80-120 mg/dL. Remember to always eat with consciousness, know all the ingredients the food you’re about to eat has so you know what’s going into your body! You only have one body for your whole life, so take good care of it!!

INGREDIENTS

For the brownie:

  • 1 & 1/2 cup or 140gr of almond flour

  • 1/2 cup or 40gr of cacao powder 100%

  • 1/4 teaspoon of pink Himalayan salt

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of baking powder

  • 1 cup or 140gr of coconut sugar

  • 3 organic eggs

  • 1 tablespoon of vanilla extract

  • 1 cup dark chocolate chips (you don’t need to measure chocolate chips…just use lots!!)

  • 1/2 cup or 75gr of coconut oil (melted)


For the Matcha Cheesecake Filling:

  • 200gr of cream cheese

  • 1/2 cup or 150ml of whipping cream

  • 1 egg

  • 1 tablespoon of green tea Matcha powder

  • Stevia to taste

STEPS

  1. Pre-heat oven at 350F/175C.

  2. Mix together almond flour, cacao powder, salt, baking soda and baking powder. Set aside.

  3. On a separate bowl, melt the oil and mix well with the eggs, coconut sugar and vanilla.

  4. Pour the dry ingredients (step 2) into the wet ingredients (from previous step) and mix until fully incorporated.

  5. Add the dark chocolate chips to the dough, mix and place the batter into little baking loaves molds or mold of choice.

  6. Bake for 15 minutes and allow to cool on a rack. Since the brownies will be undercooked, a hole will be created in the middle of the loaf naturally once they cool a little bit. If it doesn't, once cooled you can make the hole yourself with a knife.

  7. Mix all the ingredients of the Matcha Cheesecake filling together and place in the middle holes of each brownie.

  8. Bake for another 15-20 minutes or until you see the top cheesecake layer is golden.

  9. Remove from oven and let them cool in the molds for 15 minutes and then remove from the mold and cool completely on a rack.

  10. Once cooled, you can drizzle some melted dark chocolate on top or desired topping!


* Store in an air tight container in the fridge, since it has cheesecake filling and it will keep better. I don’t know how many days it would last, but it’s so yummy than you will eat it in 2 days!

Delicioso brownie saludable. DOBLE CHOCOLATE. Lleva cacao en polvo y además pepitas de chocolate negro. Está delicioso, podéis observar la buena pinta que tiene en las fotos…!!

Este delicioso brownie no tiene gluten, ni lácteos ni azúcares refinados!

Es una receta fácil y rápida!

INGREDIENTES

Para el brownie:

  • 1 & 1/2 tazas o 140gr de harina de almendra

  • 1/2 taza o 40gr de cacao en polvo 100%

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1/2 cucharadita de levadura en polvo

  • 1/2 cucharadita de bicarbonato sódico

  • 1 taza o 140gr de azúcar de coco

  • 3 huevos ecológicos

  • 1 cucharada de extracto de vainilla

  • 1 taza de pepitas de chocolate negro (no necesitáis pesar las pepitas de chocolates, simplemente poner muchas! :P)

  • 1/2 taza o 75gr de aceite de coco derretido

    Para el relleno de Cheesecake con Matcha:

  • 200gr de queso crema

  • 1/2 taza o 150ml de nata para montar

  • 1 huevo

  • 1 cucharada de té verde Matcha en polvo

  • Estevia al gusto

    PASOS

    1. Pre calentar el horno a 175C.

    2. Mezclar la harina de almendra, el cacao, levadura, bicarbonato sódico y la sal. Reservar.

    3. En otro bol, derretir el aceite de coco y mezclar con los huevos, el azúcar de coco y la vainilla.

    4. Verter los ingredientes secos del paso 2 en los ingredientes líquidos del paso anterior.

    5. Añadir las pepitas de chocolate negro, mezclar y verter en un molde cuadrado de unos 20cm.

    6. Hornear unos 15 minutos y dejar que se enfríen en el molde, como no estarán cocinados del todo, se creará un hueco en el medio de cada bizcocho. Si no es el caso, cortar con un cuchillo un rectángulo en el medio de cada bizcocho.ç

    7. Mezclar todos los ingredientes del cheesecake y cubrir cada uno de los huecos de los bizcochos.

    8. Volver a hornear unos 15 minutos o hasta que la parte del cheesecake esté dorado.

    9. Dejar enfriar los bizcochos en los moldes y luego en una rejilla hasta que se enfríen por completo.

    10.Podéis añadirle el topping que queráis, yo he esparcido un poco de chocolate negro desecho.

* Conservar en un recipiente hermético en la nevera, ya que tiene una parte de cheesecake. Creo que puede conservarse 1 semana, pero no lo sé porque nos lo comimos en 2 días :P !!
