SPELT PUMPKIN COOKIES

Pumpkin Cookies made with spelt flour but easily substituted with rice flour to make a completely gluten free cookie version :)

I made this recipe with pumpkin leftovers from my last recipe MINI PUMPKIN BREADS, check it out as well as it turned delicious too!

DIABETIC DIET TIP

These healthy pumpkin cookies are so good as snack or dessert any time of the day! It has no added sugar and won’t spike your sugar levels!

In this case I used erythritol, you can also use coconut sugar if you prefer but the sugar content will be higher although still is a better sugar option coconut sugar as well.

INGREDIENTS

  • 130gr pumpkin (I baked a whole pumpkin and used 130gr cooked for this recipe)

  • 1 whole egg

  • 60gr coconut oil

  • 100gr erythritol or coconut sugar or sweetener of choice

  • 1 teaspoon vanilla extract

  • 1 cup or 120 gr spelt flour

  • 1 cup or 70gr almond flour

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon Himalayan pink salt

  • 1 teaspoon baking soda


STEPS

  1. Pre heat oven at 350F/175C. Line a cookie tray with parchment paper and set aside.

  2. In a food processor or hand blender, blend the pumpkin with the egg, coconut sugar and vanilla extract.

  3. Transfer to a bowl and add the erythritol. Add the rest of the ingredients and mix until fully combined.

  4. With a spoon pour each cookie on the tray, you will need to use 2 trays or make it two times because they will spread on the tray and you can only fit 9 and the recipe will make around 15 cookies.

  5. Add desired topping and bake for 20 minutes or until golden brown.

  6. Let them cool in a rack and enjoy!


* Store in an air tight container at room temperature for 5 days.

Galletas de espelta y calabaza sin lácteos ni azúcares añadidos! Están súper ricas y son ideales para cualquier momento del día!

Puedes substituir por harina de arroz para hacer una versión sin gluten :)

INGREDIENTES

  • 130gr calabaza (he cocinado una calabaza y he usado solo 130gr una vez cocida)

  • 1 huevo

  • 60gr aceite de coco

  • 100gr eritritol o azúcar de coco o endulzante preferido (si usas stevia la cantidad será de 1 cucharada)

  • 1 cucharada de extracto de vainilla

  • 1 taza o 120 gr de harina de espelta o harina de arroz

  • 1 taza o 70gr harina de almendra

  • 1/2 cucharadita de canela en polvo

  • 1/2 cucharadita de sal rosa del Himalaya

  • 1 cucharadita de bicarbonato sódico


PASOS

  1. Pre calentar el horno a 175C. Poner papel de horno en una bandeja y reservar.

  2. En una procesadora de alimentos o trituradora de mano, triturar la calabaza con el huevo, el aceite de coco y el extracto de vainilla.

  3. Transferir a un bol y añadir el eritritol. Añadir el resto de los ingredientes y mezclar bien hasta que esté completamente integrado.

  4. Con una cuchara verter cada galleta en la bandeja. Tendrás que utilizar 2 bandejas o hacerlo en 2 tandas ya que las galletas se esparcirán y sólo cabrán unas 9 galletas. Te saldrán unas 15 galletas.

  5. Añadir el topping deseado y hornear durante 20 minutos hasta que se doren.

  6. Dejar que se enfríen en una rejilla y a disfrutarlas!

* Conservar en un recipiente hermético a temperatura ambiente durante 5 días.
