- 3 ingredient - HEALTHY PIÑA COLADA ICE CREAMS

You only need 3 ingredients to make this delicious, healthy and easy recipe! I love the combo of pineapple and coconut! So since hot weather is already here, what a better refreshing snack to have than these healthy piña colada ice creams!

DIABETIC DIET TIP

These healthy piña colada ice creams are a great choice for everyone! Only 3 ingredients! Only the natural sugar of the pineapple and 3 tablespoons of eritritol are the ingredients that give these yummy ice creams its sweetness.

Thanks to the fats of the coconut milk, the combo of pineapple-coconut won’t spike your sugar levels! Remember to always make sure your sugar levels are stable before starting to eat (around 100mg/dL).

Each of these ice creams has the following macros (without the protein powder):

6.7gr carbs - of which 6gr natural sugars · 9 gr fats · 2.3gr protein

If you add 1 scoop of protein powder, each ice cream will have 9.8gr protein.

INGREDIENTS

  • 160gr chopped pineapple (I cut a pineapple into little pieces)

  • 115gr canned coconut milk (this time I did not refrigerate the canned coconut milk previously, I had it a room temperatura and I only use the thickest part, although it was not as thick as it would be when you have it in the fridge).

  • 3-5 tablespoons of Erythritol or coconut sugar or date paste

  • Optional: 1 scoop of vanilla protein powder (if you want your ice cream to be protein rich)


STEPS

  1. In a food processor or hand mixer, blend the pineapple with the coconut milk. If the coconut milk doesn’t combine well with the pineapple, it can be that your pineapple is cold, so put it in the microwave for 30s.

  2. Once well combined, add the desired sweetener, I used Erythritol in this case.

  3. If you would like to add the protein powder, add it now. I did one of the ice creams without protein and the rest with protein and only the one without protein was more firm.

  4. Pour the filling into the desired molds and freeze for at least 2 hours. I froze them overnight.


* Store in the freezer.

Helados de piña colada súper refrescantes y saludables! Tan solo llevan 3 ingredientes! Muy fáciles de hacer. No llevan gluten, ni lácteos, ni azúcares refinados o añadidos y son veganos! Como opción puedes añadir proteína de vainilla si quieres que tengan más contenido proteico.

Cada helado contiene (sin la proteína):

6.7gr carbs - de los cuales 6gr azúcares · 9 gr grasas · 2.3gr proteína

Si añades 1 scoop de proteína de vainilla en polvo, cada helado contiene 9.8gr proteína.

INGREDIENTES

  • 160gr piña cortada

  • 115gr leche de coco en lata (esta vez no he dejado la lata de coco en la nevera previamente, sino a temperatura ambiente. No estaba sólida como cuando ha estado en la nevera, pero he usado la parte que más solida estaba)

  • 3-5 cucharadas de eritritol, azúcar de coco o pasta de dátiles

  • Opcional: 1 scoop de proteína de vainilla (si quieres que tu helado tenga contenido proteico)


PASOS

  1. En una procesadora de alimentos o trituradora de mano, triturar la piña y la leche de coco. Si la leche de coco queda separada de la piña, puede ser que sea porque la piña está fría. Ponla en el microondas 30s.

  2. Una vez esté bien combinado todo, añadir el endulzante deseado. Yo he usado eritritol.

  3. Si quieres puedes añadir proteína. Yo hice todos los helados con proteína menos uno, para ver la consistencia, y sólo el helado que no llevaba proteína es el que más sólido estaba.

  4. Verter el relleno en el molde deseado. Congelar por lo menos 2 horas, yo dejé los helados en el congelador durante la noche.

* Conservar en el congelador.
