HEALTHY PEANUT BUTTER FUDGE


One of my coworkers brought home made Peanut Butter Fudge the other day and I love it! So I thought… let’s see how it’s made of, what ingredients…

No comments at all (because bad, very bad) so this is why I thought that this blog couldn’t miss having a HEALTHY version of the classic Peanut Butter Fudge!

And on top of that, I also made a video so you can clearly see how to make it!!

Simple and healthy ingredients. That’s how it should be. So this healthy peanut butter fudge is made with peanut butter, coconut sugar, coconut flour and a secret ingredient!

Having Thanksgiving tomorrow, any healthy dessert on this blog is going to be always a better alternative than any other regular dessert out there full of refined sugars and additives. This is why Your Daily Nutrients started, to help you live deliciously healthy!

So this healthy recipe is no different! Even though this healthy Peanut Butter Fudge has some sugar content (the healthier sugar), a piece of this delicious healthy fudge it’s a great option! Remember to check you blood sugar levels before, during and after eating, specially because you will probably eat more than you’re used to.

In these type of family and friends gatherings, you will eat a big amount of carbohydrates, fats and protein mix, so your digestion will be quite slow… this means that your insulin might get into your bloodstream before your sugar and therefore experience an hypoglycemia. An important strategy to avoid shooting to much insulin before eating, is to do it gradually. Shoot half of the insulin dose before eating and the other half just when you finish eating. This will maintain a more stable blood glucose levels throughout the evening and night. Let us know if you have any questions about this!!!!

Remember that moderation is key ALWAYS! So now that Thanksgiving is here and Christmas is coming… I will give you some tips to be able to enjoy all the food and stay on track at the same time!

INGREDIENTS

  • 1 cup or 250gr of natural Peanut Butter (you can substitute for any nut butter)

  • 1/4 teaspoon of pink Himalayan salt

  • 1 teaspoon of vanilla extract

  • 1/4 cup of toasted coconut butter

  • 1/2 cup or 70gr of powdered coconut sugar (just blend regular granulated coconut sugar)

  • 2 tablespoons of coconut flour


STEPS

  1. In a bowl, mix the peanut butter with the toasted coconut butter.

  2. Add the salt (if your peanut butter doesn’t have any) and the vanilla extract and mix well.

  3. Add the coconut sugar and mix well.

  4. Add the coconut flour and mix everything until fully incorporated.

  5. Add the mixture to a 8inch/20cm rectangle mold or mold of choice with parchment paper and refrigerate for 2 hours.

  6. Remove from the mold and cut into squares.


* Store the squares in an air tight container in the fridge or freezer.

🇪🇸 Spanish:

FUDGE se le llama a este tipo de dulce, que viene a ser como un turrón realmente! Es muy típico aquí en Estados Unidos, pero los ingredientes que llevan son procesados, refinados, aditivos…

Así que he creado la versión saludable. Sigue siendo un dulce y hay que comerlo con moderación pero al menos lleva nutrientes, no como los tradicionales! :)

INGREDIENTES

  • 1 taza o 250gr de crema/mantequilla de cacahuete (podéis substituir con la mantequilla de fruto seco que queráis)

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1 cucharadita de extracto de vainilla

  • 1/4 taza de mantequilla de coco tostado

  • 1/2 taza o 70gr de azúcar de coco en polvo (triturar el azúcar de coco normal hasta que se convierta en polvo)

  • 2 cucharadas de harina de coco


PASOS

  1. En un bol, mezclar la crema de cacahuete con la mantequilla de coco tostado.

  2. Añadir la sal (si vuestra crema de cacahuete no tiene sal) y el extracto de vainilla.

  3. Añadir el azúcar de coco y mezclar bien.

  4. Añadir la harina de coco y mezclar bien todo hasta que esté bien incorporado.

  5. Añadir la mezcla a un molde rectangular de 20cm o el molde que queráis con papel de horno y dejar en la nevera durante 2 horas.

  6. Desmoldar y cortar en cuadrados.

* Conservar los cuadrados en un recipiente hermético en la nevera o congelador.
