HEALTHY PROTEIN LEMON TARTS


After the holidays we try to stay away from sweets as much as possible, but since it’s not as easy as it seems, here’s a great option for a healthy dessert after the holiday, so you feel GUILT FREE!

How cute are these healthy lemon tarts ? They’re gluten free, sugar free, dairy free and vegan!!! Besides, they’re high in protein as well! Yay!

You can enjoy them any time of the day because the macronutrient content (healthy fats, protein and carbohydrates) it’s great!

DIABETIC DIET TIP

One of the best snacks we have for diabetics on our blog, hands down! Why?

Because these healthy lemon tarts are low carb, made with almond flour, protein powder and no added sugar!!! So that means there is no added sugar content therefore, no sugar spikes! That’s something to celebrate, always!

INGREDIENTS

Crust:

  • 1 cup or 95 gr of almond flour

  • 2 scoops or 60gr of vanilla protein powder

  • 1 teaspoon of lemon zest

  • 3 tablespoons of coconut oil (melted)

Filling:

  • 4 tablespoons of lemon juice (1 lemon aprox)

  • 2 tablespoons of lemon zest

  • 1/2 teaspoon of vanilla extract

  • 1 cup or 250ml of canned coconut cream

  • 2 tablespoons of agar agar or grass-fed gelatin

  • 2 scoops or 60gr of vanilla protein powder


STEPS

  1. Mix all the crust ingredients together and evenly press dough in bottom of each tartlet mold. Set inside the fridge.

  2. In a bowl, mix the rest if ingredients except the agar-agar or gelatin.

  3. Add the last ingredient and refrigerate overnight.


* Store in the fridge or freeze it so you can enjoy it any time of the day or night!

Después de las fiestas Navideñas la mayoría de personas se proponen no comer ningún dulce! Ya que eso es difícil… os comparto una receta nutritiva y saludable para que podáis disfrutar de un dulce sin culpa!

Estas tartaletas de limón son altas en proteína y bajas en carbohidratos!
No requieren horno, no llevan gluten ni lácteos ni azúcares añadidos y además son veganas!

INGREDIENTES

Base:

  • 1 taza o 95gr de harina de almendra

  • 2 scoops o 60gr de proteína de vainilla

  • 1 cucharadita de piel de limón rallada

  • 3 cucharadas de aceite de coco

Relleno:

  • 4 cucharadas de zumo de limón (1 limón aprox)

  • 2 cucharadas de piel de limón rallada

  • 1/2 cucharadita de extracto de vainilla

  • 1 taza o 250ml de leche de coco enlatada

  • 2 cucharadas de agar agar o gelatina

  • 2 scoops o 60gr de proteína de vainilla

PASOS

  1. Mezclar todos los ingredientes de la base y apretar uniformemente en la base de los moldes. Dejar en nevera.

  2. En un bol, mezclar el resto de los ingredientes excepto la gelatina. Añadirla una vez este todo mezclado y verter en moldes.

  3. Dejar en la nevera hasta el día siguiente.

* Conservar en la nevera o congelar asó podéis disfrutar este dulce en cualquier momento del día o noche!
